Minted Lamb Chops (with rice and roasted veg)
- 6 Minted Lamb Chops (or number required)
- 1 green 1 red pepper sliced
- 6 cup mushrooms halfed
- 6 Shallots halfed
- 6 Cherry tomatoes halfed
- 2 teaspoons of olive oil
- small tin of garden peas
- Pre-heat the oven to 180c ga s mark 5
- place the prepared vegetables in the bottom of a large roasting pan and drizzel with the olive oil
- place the chops on top of vegetables and cover with foil roast for 15min. Remove foil turn the chops and open roast for a further 15min.
- Meanwhile boil the rice,then warm the peas, mix the peas and rice together.
- Serve the chops on top of the rice with the roasted veg on the side pour the juices from the pan over the vegetables for added flavor
