Recipe Suggestion:

Roast Chicken with Garlic
  • 2kg/4lb Fresh Chicken
  • Small head of unpeeled garlic
  • Sage
  • Rosemary
  • Marjoram(optional)
  • Mint (optional)
  • Juice of 1 lemon (keep the lemon halves)
  • 85grm bertolli spread
  • Salt & pepper
  • 1 Glass of white wine
  • 200ml vegetable stock
  • 4 carrots cut long way into 4
Cooking Method
  1. Place unpeelded garlic cloves in the oven 210c for 15min until soft
  2. With help of a tea towel remove the skins from the garlic while warm.
  3. Place the garlic, bertolli spread, herbs,lemon juice and salt & pepper in a bowl. Mix well together to form a smooth paste.
  4. Carefully ease the skin from the chicken breast and spread the paste evenly under the skin
  5. Place the lemon halves in the cavity of the chicken
  6. Line the bottom of a roasting tin with the cut carrots and place the chicken on top,this prevents the chicken sticking to the tin.season the chicken with salt & pepper.
  7. Drizzle with olive oil and pour the wine and stock in.
  8. Cover with foil and roast in the oven 200c for 2 hours. Uncover and roast for a further 25min
  9. Rest for 10min when removing from the oven carve and serve with your favorite vegetables.
